Inspired by the abundance of local produce and fresh catch of Sabah, Adelphi & Co. & INCH Coffee embarked on this journey to change the game of serving the community by lifting each other up through these collaborations of food and coffee.

A very first of its kind in the humble city of Kota Kinabalu, the night of 11th & 12th April presents a 5-course degustation menu with coffee pairings held at Adelphi & Co.

The menu, carefully curated by Chef Jimmy embraces local ingredients by incorporating in-season fresh flower crab, prawns, mangoes, heirloom tomatoes with various fresh herbs and spices. The whole course is revolved around five main flavour profiling: acidity, spicy, savoury, sweet and bitter.

The whole course is revolved around five main flavour profiling: acidity, spicy, savoury, sweet and bitter. Using techniques such as the sous-vide method, a unique technique as cooking is incorporated in a controlled temperature for up to 36 hours to ensure that the meat retains its moisture and tenderness, this will introduce guests of the night to a world of gastronomy where it will be all about our relationships between food, culture and appreciation in the art of food.

As people are beginning to appreciate specialty coffee with a more evolved flavour, Adelphi & Co & INCH Coffee has taken their shared passion to showcase specialty coffee in a very different light, in this case the coffee pairings with a menu that would send sensations and your taste buds craving for more.
